You know how I am spending more time in the kitchen lately? It’s good for a few reasons: I am trying to get creative with my food choices, reading and following recipes is good brain/eye work, and getting around the kitchen is an excellent mobility challenge. It’s also highly functional – I view moving in the kitchen as an essential party of my recovery and a critical element of achieving greater independence. Also, since I’m working on using Leo less it motivates me to walk/cruise without a cane since you have to carry ingredients from the fridge to your prep site.
Some of my experiments are complete flops. If they are yummy but ugly I still eat them but don’t show them to you. Today, though, I wanted to share my most recent flop – Blueberry Lemon Squares [Grain Free, No Sugar Added]. I think the problem was that the flax eggs were too cold so they made the coconut oil hard and then I had to add (too much) almond milk to fold the blueberries in. Otherwise it probably would have worked out. I’ll have to try again. In the meantime, though, I’ve been eating my wet cake in a variety of ways – with Greek yogurt for breakfast, with Greek yogurt in a popsicle (just mix the 2 and freeze), and in a protein shake. I have enjoyed these iterations of my failed baking I wanted to share them with you. Waste not, want not.
