141. Cucumber Canoes

Happy Friday!  Today I’ve got an easy-peasy recipe for you.  Well, it’s not really a recipe – these are really just assembly instructions.  I was inspired by a Pin that showed cucumber “subs” – lots of crunch, zero carbs – but since I’m not able to open my mouth very wide anymore Mommy suggested I do open-faced cucumber “canoes” instead.  That Mommy.  She’s always thinkin’.  These are so easy, all I need is for Mom to cut the cucumber in half and I can assemble the rest.  I used cheddar (Tillamook) and leftover chicken as fillers, but would love to try hummus, eggplant, and roasted red pepper (the kind that comes in jars).

P.S.  Here’s a fun smoothie to go with the canoes.  Or good on its own for breakfast.  I like protein powder because it’s such an easy way to pack more protein in your diet.  I don’t fancy the fact that you have to buy another item at the store/online to enjoy it, and I’m trying to eat more naturally, anyway.  So the Greek yogurt adds a nice protein punch into this Peach Carrot natural “Protein” shake/smoothie.  The amount of peaches (and everything) is flexible.  I just dumped the remnants of a bag of frozen peaches in my Vitamix and eyeballed it.
