28. Green Soup

If you’re wondering what that green stuff is in my giant teacup, it’s one of my current faves, Green Soup!  It’s so yummy, you should drink/eat it too.

1.  Boil/Simmer lots of frozen veggies in a pot with water and a little chicken stock.  There should be a healthy portion of spinach in there so the Green Soup is actually green – the mixture of other veggies is up to you.

2.  Scoop up a portion for yourself and use an immersion blender to puree the soup; add a touch of 1/2 and 1/2.

3.  Enjoy!
